Zucchini Fritters (gluten-free)


2 medium zucchinis, grated

10 sprigs of fresh flat-leaf parsley, finely chopped

2 large eggs, lightly beaten

½ cup all-purpose gluten-free flour

1 clove of garlic, minced

1 tbsp of freshed grated lemon zest

1tsp sea salt

4tbsp of organic olive oil


Combine zucchini, parsley, eggs, garlic, lemon zest and sea salt in a medium bowl. Slowly add the flour and stir in.

Heat oil in medium pan over medium heat. Drop about 1 heaping tablespoon of mixture into pan. Repeat and space out the fritters.  Cook until golden brown (approx. 3mins a side). Flip fritter until other side is golden brown.  Remove fritters from pan and place onto plate.
