2 & 1/2 c Almond Flour
3/4 c coconut sugar or honey equivalent
1 Tbs. cinnamon
1 tsp. nutmeg
1 tsp baking soda
1/4 tsp salt
2 & 1/2 c grated zucchini
1/4 c almond or coconut oil
Grease muffin tin. I use a mini however a regular size works great as well. Mix all dry ingredients in a large bowl. Add wet ingredients and mix well. At this time I add in chopped walnuts, optional. Scoop batter into muffin tin and bake 18-20 minutes for mini/22-26 for regular size.
Check with a toothpick for doneness.
Make 12 regular size and 24-26 minis.
