Cauliflower Tabouli

Ingredients:

1 head of cauliflower

2 plum tomatoes, diced

1/3 long cucumber, chopped

1/3cup of lemon juice

4tbsp extra virgin olive oil

2tbsp of gluten-free soya sauce

4 scallions, chopped

1-2 bunches fresh parsley, chopped

2tbsp mint, chopped

salt and pepper

Instructions:

  1. Grate caulflower into grain size pieces.
  2. Toss grated cauliflower, diced plum tomatoes, chopped cucumber, lemon juice, olive oil, soya sauce, scallions, parsley, and mint in a large bowl.
  3. Season with salt and pepper.
  4. Enjoy!
