Paleo Waffles (serves 6)

Ingredients

Paleo Waffles (serves 6)
3 cups Almond Flour

½ cup Tapioca Flour

2 Tbsp Coconut Flour

4 Tbsp Maple Syrup

2 Tbsp Baking Powder

½ tsp Sea Salt

¼ tsp Ground Cinnamon

4 Eggs, divided

1 cup Unsweetened Almond Milk

4 Tbsp Coconut Oil

1-1/2 tsp Vanilla Extract

1 cup Desired Frozen Fruit

Directions

  1. Combine all dry ingredients in a food processor and pulse to combine. If you don’t have a food processor, a blender will work.
  2. Beat the egg whites until soft peaks form. Set aside.
  3. Add the remaining wet ingredients (egg yolks, almond milk, coconut oil, and vanilla) to the dry ingredients and pulse until evenly combined. You should have a slightly thick but smooth batter.
  4. Fold in the egg whites until just combined. Then fold in frozen fruit.
  5. Use coconut oil to grease your waffle iron.  Pour batter into your waffle iron, making sure not to overfill it. Cook until steam stops rising and you can easily open the waffle iron. Gently remove the waffles and serve hot with your favorite toppings.
