Mushroom-Miso Soup

Fall is the time of year when we see a natural dip in our immunity.

What better way to give your body a boost but with mushrooms! Even button and
cremini varieties contain healthy polysaccharides to support a weakened immune
system.

Here is an easy-to-make soup if you’re feeling under the weather and/or need
something light, nutritious and easy to digest. Be creative and substitute your
favourite varieties such as shitake and reishi mushroom. And be sure to keep a little
jar of medicinal mixed mushroom powder on hand to add an extra boost to your
healing broth.

Ingredients:

1 Tbsp Olive or Avocado oil
1 medium onion
1 Tbsp finely chopped ginger
2 cloves minced garlic
4 cups of veggie broth
2 Tbsp white miso
4 oz firm/pressed tofu
4 oz of fresh mushrooms (button, cremini, shitake, etc)
2 cups of chopped spinach
2 green onions, sliced thin

Instructions:

  1. Heat oil over medium in a large soup pot, add onion and sauté until soft
  2. Add ginger and garlic and allow to sauté another 3 minutes
  3. Add broth and bring to a boil, then reduce to simmer
  4. Add miso paste and whisk until dissolved
  5. Add remaining ingredients, except for green onion, and simmer until mushrooms
    soften (2-3 minutes)
  6. Garnish with green onion and enjoy
