Shortbread Cookies (gluten-free, dairy-free)

1 1/4 c quinoa flour
1/2 c + 1 tbsp. coconut sugar
1/2 c corn starch
3/4-1c butter (softened)
Whip butter and add dry ingredients, roll into balls and flatten with fork and bake at 350 for 15-20 minutes.
