Almond Butter Chocolate Chip Cookies
1 cup unsalted almond butter stirred well (you can use smooth or crunchy)
¾ cup coconut palm sugar
1 large egg
½ tsp baking soda
¼ tsp sea salt
4 oz. dark chocolate chips
Preheat oven to 350 degrees. In a medium bowl, stir together first 5 ingredients until blended. Stir in chocolate, let set for 1-2 minutes. Drop dough by rounded tablespoons onto parchment lined baking sheets, pat slightly. Bake for 10-12 minutes or until lightly browned. Do not over bake. Let cool on baking sheet for 5 minutes (very important) then remove to a wire rack and cool for 15 minutes more.
