Quinoa Tabouli with Chia Seeds
1 cup of uncooked quinoa (2 cups of cooked quinoa)
2 cups of chopped fresh parsley
½ cup of chopped green onions
2 cloves of chopped garlic
1tbsp of fresh chopped basil
1 cup of diced fresh tomatoes
½ cup of fresh lemon juice
½ cup of extra virgin olive oil
¼ cup of black chia seeds
Cooked quinoa with 2 cups of water.
Mix all ingredients together and serve.
