Rice wraps
Ingredients
Red lentil and rice wrap (or rice wrap or spelt wrap)
1tbsp of hummus
2tbsp Beans
2tbsp Peas
2tbsp Corn
1/8cup of Brown and wild rice
1tsp Dijon mustard
1tbsp Balsamic vinegar
1tsp Extra Virgin Olive Oil
Directions
- Cook 1/8 cup of brown and wild rice with 1/4 cup of water. Add beans, peas and corn.
- Once cooked add Extra Virgin Olive Oil, Dijon mustard and balsamic vinegar.
- Lay wrap on flat surface
- Spread hummus on one side of wrap.
- Put rice, beans, peas and corn in horizontal line slightly off-centre.
- Roll wrap
