Rainbow Quinoa Salad
Ingredients
1 cup of tricolor quinoa
2 cup of organic chicken stock
Juice of 1 lemon
2 minced gloves of garlic
½ cup of chopped cucumber
½ cup of chopped celery
2tbsp of chopped parsley
¼ cup of halved grape tomatoes
¼ cup of chopped green onions
2tbsp of olive oil
½ ripe avocado
Directions:
Cooked the tricolor quinoa in stock. Add all ingredients together. Garnish with avocado.
