Lemon Meringue Pie (GF, DF, Sugar-free)
Pie Crust
Ingredients
- ½ Cup coconut oil
- 2 Eggs
- ¼ Teaspoon sea salt
- ¾ Cup coconut flour
- 1-3 Tablespoons maple syrup
Instructions
- Preheat oven to 400 degrees
- In a bowl, beat coconut oil, eggs, maple syrup and salt together
- Add coconut flour, stirring until dough holds together
- Gather the dough into a ball, then pat into a 9” pie dish
- Prick the dough with a fork
- Bake for 8-10 minutes or until lightly brown
Filling
Ingredients
- 1 Cup lemon juice
- 5 Teaspoons finely grated lemon rind
- ½ Cup maple syrup
- ½ Cup coconut milk
- 4 Tablespoons arrow root powder
- 5 Egg yolks
Instructions
- Preheat oven to 325 degrees
- Mix lemon juice, lemon rind and maple syrup in a pan on low heat
- In a small bowl, combine the coconut milk and arrow root powder
- Add it to the lemon juice mixture, stirring consistently until simmering
- Beat egg yolks together in a small bowl and then add to the simmering lemon mixture, stirring constantly for 4 minutes (or until mixture has thickened)
- Pour into the pie crust
Meringue
Ingredients
- 5 Egg whites
- 2 Tablespoons maple syrup
Instructions
- Beat the egg whites and maple syrup together until stiff peaks form
- Spoon the meringue on top of the pie filling
- Bake for 8-10 minutes or until lightly brown
- Cool before serving
