Cauliflower Dill Soup

INGREDIENTS:

  • 1 head cauliflower, broken up into florets
  • 6 cups vegetable or chicken broth
  • 1 onion, roughly chopped
  • 1 tsp pepper
  • 1 tsp sea salt
  • 1 tbsp dill
  • 1/2 cup coconut milk
  • 1/2 tsp curry powder
  • 2 tsp lemon juice
  • 2 tsp parsley
  • 2 tsp garlic powder
  • 2 tbsp apple cider vinegar

DIRECTIONS:

  1. In a large stock pot, add the cauliflower florets, chicken broth and onion. Bring to a boil over medium-high, turn to medium and let simmer until the cauliflower is soft.
  2. Transfer to a blender and puree.
  3. Add the rest of the ingredients; simmer for at least twenty minutes.
