Banana Chocolate Chip Muffins (gluten-free)
Ingredients:
1/3 cup butter
3-4 bananas
1 cup organic coconut palm sugar
1 tsp. vanilla
1 egg (beaten)
1 tsp. baking soda
½ tsp. xantham gum
Pinch of sea salt
1 ½ cups brown rice flour
Instructions:
Mash bananas. Stir in melted butter. Add sugar, vanilla, eggs and mix in. Then add baking soda, xantham gum and sea salt. Stir in flour. Grease a muffin pan. Bake at 350C for 20 minutes.
*To make into a banana loaf, grease a 4×8 pan. Bake at 350C for 1 hour.
