Dr. Miller’s Clean Green Sauce
I use this sauce over grilled chicken or in Paleo bowls with chili powder-seasoned ground beef, roasted
cauliflower and crispy sweet potatoes. Both parsley and cilantro are powerful detox herbs and the olive
oil adds a good dose of healthy fat. You can easily switch out the herbs, such as using dill instead of
cilantro for salmon.
1 bunch fresh organic cilantro
1 bunch fresh organic curly parsley
2/3 cup olive oil (amount can be varied according to desired consistency of sauce)
2 tbsp lemon or lime juice
Salt, pepper, and hot sauce to taste
For the herb bunches, I cut off the tips of the stems but leave the rest, as the stems are packed with
flavor. Rinse and spin the herbs in a salad spinner before adding all the ingredients to a food processor
(or a NutriBullet) and blend until mixed. This sauce stores well in the fridge for up to a week.
