Simple Banana Pancakes (gluten-free, grain-free, dairy-free)

Ingredients:

1 banana, mashed

2 large, organic eggs

Directions:

Mix ingredients together in a mixing bowl.

Heat olive oil or coconut oil in medium pan over medium heat. Spoon about 1 tablespoon of mixture into pan. Repeat and space out the fritters.  Cook until golden brown (approx. 3mins a side). Flip pancake until other side is golden brown.  Remove pancake from pan and place onto plate.

Can serve with berries or real maple syrup.
