Crockpot Beef Chili

Ingredients:

2 pounds organic, grass-fed ground beef

1 onion, finely diced

3 cloves garlic, minced

2 (14.5 ounce) cans diced/whole tomatoes with water

4 stalks of celery, chopped

4 carrots, chopped

1 (15 ounce) can kidney beans

1 (15ounce) can chickpeas

1 (15 ounce) can pinto beans

2 tablespoons chili powder

1 tablespoon ground cumin

1 tablespoon oregano

1 tablespoon parsley

1 tablespoon basil

1 tablespoon salt

Directions:

  1. The night before chop up the carrots, celery, onions and garlic, put it all in a container and stick it in the fridge overnight.  Add all the spices to the container of vegetables.
  2. Then brown the ground beef on the stove in a frying pan.  When they cool, put then in another container and stick it in the fridge overnight.
  3. In the morning, put all the ingredients into the crockpot, turn the crockpot on for 6hrs at low and dinner is ready and warm when you get home in the evening.
